Homemade Hummus

You need:
• 2 Cups of Cooked Chickpeas
• 2 Tablespoons of Tahini
• Juice of 1 Lemon
• 3 Cloves of Garlic
• 1/4 Cup of Olive Oil
• Salt & Pepper to Taste

How to make:
– Blend lemon juice, garlic, tahini and olive oil for 10-20 seconds
– Add the chickpeas and blend until smooth
– Add seasoning to taste
– Add a pinch of dry mustard, smoked paprika, coriander and cumin (Optional)

Oven-roasted Chickpeas

You need:
• 1 Cup of Cooked Chickpeas
• 2 Tablespoons of Olive Oil
• 1 Tablespoon of Nutritional Yeast
• 1 Teaspoon of Salt
• 1 teaspoon of Dry Mustard Powder

How to make:
– Preheat oven to 180-200C
– Dry your chickpeas well
– Place them in a baking tray with oil and a sprinkling of salt
– Coat well
– Place in the oven for 40 minutes
– Remove from oven and add any additional spices you like

Let the chickpeas cool completely before storing in a container to ensure they stay crisp.

Homemade Popcorn

You need:
2 Tbsp Olive oil
1/2 cup popping corn kernels
1 Tsp Salt

How to make:

  • Drizzle olive oil in a medium-sized pan and heat (a heavy-bottomed pan works best)
  • Put 2-3 kernels into the pan to test the oil (Wait till they pop)
  • Pour the rest of the corn kernels into the pan and close the lid.
  • Wait 3-4 mins while they pop
  • Leave it another minute for any stragglers to pop as well
  • While still hot sprinkle salt (and any other spices you like)
  • Remove and put into glass/ceramic bowl to enjoy.

Homemade Potato Chips

You need:
3 Potatoes
Olive oil
Salt
Pepper (optional)

How to make it:

  • Clean and slice the potatoes
  • Soak in water for 30 minutes (this helps remove excess starch)
  • Preheat oven to 180-200C, place a baking sheet** in a baking tray, coat the baking sheet with some olive oil (do this while the potatoes are soaking)
  • Spread the potato slices on the tray, drizzle more olive oil over them and add the seasoning
  • Bake for 10 minutes
  • Take them out, flip them over
  • Bake for a further 5 minutes. Keep an eye on the chips as they bake through if they start to brown too much remove from the oven.

**Since this is a zero-waste recipe I would encourage you to use a compostable baking sheet. Or try to not use one at all.
